Fluffy lemon pancakes!
This is my favourite pancake recipe so I thought I'd post it on my blog! One of my favourite pancake toppings is a lemon and icing sugar drizzle, but you could really add which ever topping you desire: some blueberries in the batter would be great, or yogurt and berries!
Ingredients ( makes 5 medium sized pancakes)
3 medium eggs
120g plain flour
1 tsp baking powder
140ml milk
35g golden caster sugar
pinch of salt
some butter for frying
juice of a lemon (2-3 tablespoons)
25g icing sugar
Method
1) Separate the egg white and yolks into 2 separate bowls
2) Whisk the egg whites with a pinch of salt until you have stiff peaks
3) In a bowl, combine the egg yolks, the milk, the sifted flour, the golden caster sugar and the baking powder. Beat/whisk together until it's well combined.
4) Using a spatula, add the whisked egg whites bit by bit to the egg yolk mixture, folding them in together so as to not lose too much air from the egg whites.
5) Heat a frying pan on a low-medium heat, then melt a little bit of butter.
6) Use a ladle to spoon some of the mixture into the pan
7) After a few minutes, use a long spatula and knife to help you flip the pancake. Then leave it on the flipped side for another few mimutes before setting it aside on a plate.
8) For the lemon drizzle, combine the juice of a lemon (2-3 tablespoons) to 25g icing sugar (this is a drizzle not an icing, therefore it will be quite liquidy so that it can go through the pancakes).
