Potato Gnocchi!

This was one of my favourite recipes growing up, and still is now so I thought I should share it!
"Gnocchi al sugo" as I'd say in Italian, so basically gnocchi in tomato sauce!



Ingredients below are for 4 people (in the pictures, the quantities seem more because this was made for 6)


870g red potatoes
300g plain flour (+ more if needed)
1 litre of sauce of preference
basil
grated grana padano cheese/parmesan
olive oil (optional)
salt 


Method

1) Peel the potatoes, cut them into chunks, put them in a saucepan and fill it with enough water to cover the potatoes. On a medium heat, let the water reach boiling point, put the lid on and wait 30 minutes. Then drain, mash, and place them on a counter with flour. 


2) We don't want it to be bland so add enough salt. Sprinkle some more flour on top. 


3) Now work the dough and knead until the potatoes have absorbed most of the flour. Bear in mind that it won't be as smooth as bread dough, so add enough but not too much flour. 



4) Now put come cloth material/baking paper on trays and sprinkle them with flour. Cut disks from the dough, roll them out and cut about 1 1/2cm pieces (about half an inch), place them on the trays, leaving enough space so they don’t stick together. 



5) Leave them to rest as they are for 45 minutes/ 1 hour. 

6) Afterwards, cook them in salted boiling water for a couple of minutes; you’ll notice that they’ll float to the surface once ready. Drain them and toss gently with your favourite sauce, I chose tomato passata!
