Creamy chicken, mushroom and spinach pasta

Hi everyone! I'm aware that I haven't posted on my blog in a while, mainly because University life is keeping me very busy so I've had little time to sit at my computer and write anything which isn't work related. But the other day I was scrolling through my phone and found pictures of an easy meal I made the other day with my friend which turned out so yummy so thought I'd share it on here since it's been a while since I've made a food related blog post.

Creamy chicken, mushroom and spinach pasta 



Ingredients (serves 2)
- 150 grams of fusilli pasta
- 300g button mushrooms
- 120g sliced cooked chicken
- handful of spinach
- 100-150ml single cream
- grated cheddar cheese
- salt
- olive oil


Method 

Step 1] Prepare the mushrooms by first removing any grit from the outside, then chop them into cubes.

Step 2] Place a pan on the hob on high heat and let it heat up for a bit. Then add a drizzle of olive oil


Step 3] When the pan is sufficiently hot, add the chopped mushrooms and stir so they get coated with the olive oil. Leave them to cook in the pan for a good 10-15 minutes, until they release pretty much all their water. Keep stirring. 



Step 4] As the mushrooms finish cooking, place a pot on the hob on medium-high heat, fill with water, let the water come to a boil, sprinkle in some salt, then place the pasta and cook to taste (whether al dente or more soft). I wouldn't recommend cooking it too soft since we will also be adding it to the pan later which will continue cooking it for a bit. Once cooked, use a colander to get rid of the pasta water so the pasta is ready to add to the mushroom pan.

Step 5] Once the mushrooms finish cooking, remove the majority of the water they have released. 

Step 6] Then add the single cream to the pan, stir, then the spinach and stir everything together so that it can wilt in the pan. Finally, add the pasta, sliced chicken and sprinkle over some grated cheddar cheese, then you can plate up and enjoy!
